The Briarhurst Manor is one of the most elegant restaurants and event centers in the Colorado Springs area. And it’s haunted to boot, which makes it even more special. Having discovered the charm and excellent cuisine of the Briarhurst Manor years ago, we chose it to host our son’s recent rehearsal dinner for 50 guests, many from out of town. For this large of a party, we were given the Library and adjoining Garden Room along with a private bar next to the buffet, which was set out in the entry room. Our guests raved about the atmosphere, the beauty of the building, and the wonderful food. It was definitely a night to remember and the Briarhurst went all out to make it special. While no one actually saw a ghost, numerous orbs showed up in pictures so we like to think there were others celebrating with us.
